Tabbouleh with Seeds, Nuts and Goji Berries

A FRESH & FLAVOURFUL MIDDLE EASTERN RECIPE THAT CAN BE A WHOLESOME MEAL IN ITSELF OR A VERSATILE SIDE DISH WITH FAIRTRADE INGREDIENTS.

VEGAN

Tabbouleh with Seeds, Nuts and Goji Berries

A satisying crunch with sweet, tart tones.

(Serves 2 as a main or 4 as a side dish)

Ingredients:

½ red onion
1 cup of bulgur wheat
1 medium cucumber
2 medium tomatoes
½ teaspoon of sea salt
1-2 large bunches of curly parsley (about 40g)
10-15 mint leaves
1 cup of Liberation Foods Seeds & Nuts with Goji Berries
¼ cup of olive oil (we highly recommend Zaytoun olive oil)
Juice and zest of 1 lemon
1 garlic clove minced
Salt and pepper to taste


Method:

Cook the bulgar wheat as per the packet instructions, drain and set aside to cool.

Finely slice the red onion and add to a small bowl filled with cold water to soak and soften the flavour.

Finely dice the cucumber and tomatoes and toss with ½ teaspoon of sea salt. Then palace in a mesh strainer over a bowl to drain some of the excess liquid.

Remove the red onion from the water, roughly chop the Liberation Foods Seeds & Nuts with Goji Berries and finely chop the parsley and mint. Add these to a large mixing bowl with the bulgar wheat, cucumber and tomatoes, then mix to combine.

Whisk together the olive oil, lemon juice, zest, and garlic in a small mixing bowl. Pour over the bulgar wheat and toss. Season with salt and pepper to taste and transfer onto a serving dish.
