Ingredients
For the Sauce:
- Generous handful of Chilli & Lime Cashews
- 2-3 sundried tomatoes
- ½ red chilli (adjust to taste)
- Juice of ½ a lemon
- Generous splash of olive oil
- Salt and pepper to taste
For the Gnocchi:
- 250g gnocchi, par-boiled as per packet instructions
For Garnish:
- Fresh basil leaves
- Nutritional yeast flakes (for a vegan option) or Parmesan cheese

Prepare the Sauce
Add the chilli & lime cashew nuts, sundried tomatoes, red chilli, lemon juice, olive oil, salt, and pepper to a blender or food processor. Blend until smooth, adjusting consistency with a little water if needed.

Cook the Gnocchi
Heat a pan over medium heat and add the par-boiled gnocchi. Pour in the prepared sauce and stir to coat evenly. Cook for about 3 minutes until heated through.

Plate and Serve
Divide the gnocchi between two plates. Top with fresh basil leaves and a sprinkle of nutritional yeast flakes to keep it vegan, or Parmesan for a non-vegan option.
Serving Suggestion
This dish is a satisfying and complete meal on its own, but you could pair it with a simple side salad to complement the flavours and add a fresh, light touch to the meal.
