Cacao & Goji Berry Balls

These simple yet luxurious truffles are densley packed with rich, succulent flavours that make it hard to believe they are so good for you...and so versatile!

Raw, vegan & gluten free.

Cacao & Goji Berry Balls

As good for a slow-release snack as post-dinner party treat!

(Makes 14-16 balls)

Ingredients:

2 packs of Liberation Foods Seeds & Nuts with Goji Berries
1 cup almonds (or cashews or other nuts)
1 cup desiccated coconut
10 Medjool dates (make sure they have no seeds)
½ cup cacao powder
3 tablespoons coconut oil
Pinch of salt
1 block of melted dark chocolate
Extra goji berries for topping


Method:

Place the Liberation Foods Seeds & Nuts with Goji Berries, almonds and desiccated coconut into a food processor and pulse until you’re left
with a coarse crumb.

Add the Medjool dates, cacao powder and salt and process for a minute or so until the mixture forms into a dough-like texture and holds its
shape.

Using a heaping tablespoon of mixture, roll into 14-16 balls and place in the freezer for a minimum of 30 minutes to chill for coating.

To coat, drop each of the balls into melted dark chocolate, remove with a fork and place on a lined tray in the fridge until the chocolate sets.

Once set, you can store in an airtight container in the fridge or freezer.
