Nutty Black Bean Burger

Who said being vegan couldn't feel naughty?!

(Makes 4)

Ingredients:

1 onion finely diced
2 garlic cloves minced
1 can of black beans drained, rinsed and patted dry
1c panko crumbs
½ cup of Liberation Foods Natural Mixed Nuts finely chopped
1 flax egg (1T ground flax seeds mixed with 2T water and left to sit for 5 minutes) or other egg substitute of choice
2 tablespoons tomato paste
1 tablespoon tamari sauce
1 tablespoon balsamic vinegar
½ tablespoon maple syrup
1 teaspoon smoked paprika
½ teaspoon salt
Oil for cooking

Method:

Sauté oil, onions and garlic for 5 minutes until translucent, then remove from the heat and transfer onto a paper towel to cool.

In a large mixing bowl, mash the black beans with a fork, then stir in all remaining ingredients including the onions and garlic until the mixture
holds its shape.

Divide the mixture into 4 equal portions and firmly press into tightly packed round patties.

Heat oil in a large frying pan over a low/medium heat and place the patties in to cook for 5-6 minutes on each side.

Serve with your favourite burger buns and fillings.

(We would highly recommended Banana Ketchup or Spicy Tomato relish from Rubies in the Rubble)
