Goji Berry & Greek Yoghurt Breakfast Tarts

A SWEET, NUTTY BASE, PERFECTLY COMPLIMENTED WITH A TANGY, CREAMY YOGHURT & FRUIT FILLING.

 CAN BE MADE GLUTEN-FREE OR VEGAN.

Goji Berry & Greek Yoghurt Breakfast Tarts

Start your day in a deliciously guilt-free way!

(Makes 6)

Ingredients:

2 packets of Liberation Foods Seeds & Nuts with Goji Berries
2 cups of gluten-free oats
3 tablespoons maple syrup
3 tablespoons coconut oil melted
1 teaspoon cinnamon
Pinch of salt
Thick greek yoghurt (or thick plant-based yoghurt for vegan)
Fresh berries
Maple syrup


Method:

Place Liberation Foods Seeds & Nuts with Goji Berries and oats into a food processor and pulse until you’re left with a coarse crumb.

Add the maple syrup, coconut oil, cinnamon and salt and process until the mixture holds its shape.

Divide mixture into six even portions and firmly press into six mini tart cases or large muffin trays.

Place in the fridge or freezer for a few hours or overnight to harden enough to remove from the tart cases. Once removed, store in an airtight container in the fridge until ready to serve.

When ready to serve, fill each tart case with yoghurt and top with fresh berries and maple syrup.
