Team Liberation’s Christmas Feast

As part of our 2016 Liberating Lives feasting theme we wanted to share with you some of the festive dishes from around the world that our international team at Liberation HQ will be tucking into over the holiday season. Do remember to share with us any delicious (and varied) dishes that you may be cooking up this Christmas. 

 

Kate Gaskell

MD of Liberation Foods, Kate Gaskell will be enjoying a traditional Belizean family Christmas dinner with some very colourful Caribbean (and American) twists: 

  • Roast turkey with stuffing made from breadcrumbs, herbs, spices and dried fruit and lots of gravy
  • Traditional Caribbean rice and beans made with rice, kidney beans and coconut milk
  • Baked mashed sweet potato topped with marshmallow (yes really, it’s an American thing)
  • Mashed green peas fried with bacon
  • Baked macaroni with cheese (another one that hails from the USA)
  • Typical Caribbean potato salad

All of the above topped off with some warming ginger beer!

Liberation’s Technical Manager will be fasting all day on Christmas Eve and then, upon the appearance of the first star in the sky, he’ll join his family to start the feast of Wigilla which consists of 12 meat-free savoury and sweet dishes (they are meat-free until Christmas day) including:

  • Barszcz czerwony (spiced red betoot soup) served with raviolis stuffed with ceps
  • Fried breaded carp fillet, served with mushrooms, vegetable salad and potato
  • Krokiety z kapusta (crispy pancakes stuffed with soured cabbage)
  • Pierogi z serem i ziemniaki (pasta stuffed with cheese and potatoes)
  • Rollmopsy (pickled Herrings)
  • Gołąbki (cabbage leaves stuffed with mushrooms and rice)
  • Sałatka ziemniaczana (root vegetable salad with potato as main feature)
  • Salatka z ryby (fish salad)
  • Piernik (gingerbread)
  • Kompot z suszu (dried fruit compote containing plums, apples, pears, raisins, apricots)
  • Makowiec (poppy seed cake)
  • Kutia (traditional grain based pudding with nuts, dried fruits, honey and spices)
